Do you worry every year about the flood of hard-boiled eggs? Give their consumption a little joke, and no one will be banging on about them…

it: Stuffed animal eggs are useful as a cold appetizer or a variety of cold dinner á la paneled bowl. We apply a classic yolk foam to the filling. We add popular recipes, which you can enrich with other ingredients at will.

The basic recipe for yolk mousse: 4 hard-boiled egg yolks sip through a sieve and beat with 60 g of softened butter, a teaspoon of sharper mustard and salt. We put in a decorated bag and fill half the egg whites. We decorate with pieces of paprika and cucumber.

Colored yolk foam on cute paws: Mix the peppers with a spoonful of mayonnaise, a teaspoon of Dijon mustard, 1/4 teaspoon of ground sweet pepper, a drop of worchester, salt and pepper to taste. The foam is slightly stained with paprika, but it is still necessary to supply a little pink food coloring (it can be replaced with, for example, beetroot juice). In the same way, of course, you can also dye the foam prepared according to the basic recipe.

Recipe for anchemic yolk mousse: whisk 4 hard-boiled egg yolks or mix until smooth with a teaspoon of anchaic paste and 70 g of softened butter. Season with lemon juice and salt, apply with a decorated bag. 

Do not forget about the best practice to make your eggs peel hard: immediately after cooking, put them in iced water.
