Three goodies you can make in a muffin tin

The muffin tin doesn't have to be imuffed, even if you're not going to bake your favourite 'cupcakes'. It offers great breakfasts, afternoon snacks and light fruit cakes. For

breakfast: Egg 'frittatas' with ham, cheese and quinoa Try
quinoa-and-egg-breakfast-bites-4148a small morning surprise for the family this weekend. For this great breakfast thing, you need:
2 tsp
olive oil
1/2 cup fine
ly chopped onion
1/2 cup chopped
paprika
1 1/2 cups fre
sh baby spinach, roughly chopped
3/4 cup sliced h
am
3/4 cup grated chedd
ar
1 cup cooked healthy m
iracle named quinoa (for the necessary amount put to cook about 1/3 cup raw quinoa)
7 eggs
1/2 cup milk
1/2 teaspoon salt
p
inch of freshly ground pepper
avocado sli
ces for garnish (not necessary)

How to do it:
1. In a medium frying pan, heat the oil and, stirring occasionally, allow the onions and peppers to soften for about 3-5 minutes. Add the spinach and let it wilt for about 30 seconds. Then transfer the vegetables to a large bowl.

2. Add the chopped cheese with ham and cooked quinoa to the bowl. Separately, whisk your eggs with milk, salt them, pepper them and pour them into a bowl with other ingredients. Mix.

3. Preheat the oven to 180°C. Pour the egg mixture into an oil-wiped muffin tin, it should be enough for about 12 holes. Put in the oven and bake for 18-22 minutes, then leave for another 3 minutes in a baking sheet to cool.

4.With a rubber spatula or carefully with a knife, loosen the edges of the finished frittatas from the baking sheet and take out. You can serve decorated avocado slices

Attention! We definitely recommend unloading the wells of the sheet metal with silicone moulds or firmer paper baskets! Even if you wipe the baking sheet honestly with oil, each egg mixture tends to get badly pinched – and you could easily lose your nerves, breakfast and the tin itself when you take out frittatas.

Qui

ck dinner: Pizza cupcakesOnly
Pepperoni-Pizza-Cupcakes-www.thereciperebel.com-24 main ingredients and 20 minutes of time is enough to conjure up an excellent appetizer or a quick dinner that will be loved not only by visitors, but also by your children. In this recipe, instead of pizza dough, the popular wonton dough is used in Asian cuisine, thanks to which you will get a particularly brittle and crunchy result.
You need (for 12 cupcakes):
24 small slices wonton
dough (approx. 9 centimeters)
1 cup tomato sauce f
or pizza
1 cup oversteed mozzarel
la cheese
2/3 cup chopped p
aprika (add hot peppers to the adult batch)
other ingredients such as ham, etc.

How to do it:
1.
Preheat the oven to 180°C. Spray the moulds in a muffin tin with non-stick baking spray (and if you don't have it and don't want to risk anything, just lay out the bottom with silicone mold). Mix the pizza sauce with the chopped peppers.

2. Put a slice of wonton dough in each mould and press it properly against the sides of the mould. Then divide half of the ready-made sauce into moulds – put about 1 tablespoon on the bottom of each mold. Then put another slice of wonton dough on the filling so that the tips of both slices do not overlap. Again, gently press the dough down and side by side.

3. Now fill the cupcakes with the rest of the sauce and sprinkle with mozzarella on top. Bake for 15 minutes at 180°C until the cheese is warmed up and the edges of the dough are beautifully golden and crispy. Allow the cupcakes to cool a little before serving.
