The days are suasible and you'd like to put a smile on your loved ones' faces? Then, according to our proven recipe, bake them a great sponge roll. Even a beginner can do this one.

Need

For the dough
3 eggs
80g semolina sugar
1 packet vanilla sugar
1 tsp grated lemon zest
100g plain flour

On the filling
250g cream for the cream
1 tablespoon grated lemon zest
100g apricot jam

How to do it
In a bowl, whisk the egg yolks with half the semolina sugar and vanilla sugar into a thick foam. From the egg whites and half the sugar, whisek solid snow. Mix both carefully and add lemon zest and flour. Spread the dough on a baking sheet and bake in the oven at 200 °C for about 10 to 12 minutes. Put the hot dough and baking paper on a towel, turn it over and leave to cool. Meanwhile, whisk the cream and add the jam to it. Carefully roll out the roulade, remove the baking paper and fill with cream and turn. Leave to stand in the cold for three to four hours.
