2014-05-23-How-To-Tahini-1Tahini paste is a diluted sesaem paste. The base is roasted sesame seeds, sea salt and a little oil. It is great not only for the increasingly popular chickpea hummus, but it is also suitable for salad dressings or spreads. It contains, for example, vitamin E, vitamins B1, B2, B3, B5 and B15 and is rich in minerals. It is also a great source of calcium and helps in detoxifying the liver. If you happen to run out and have it in a healthy diet where they should, far away, you can make it at home.

You need – sesame seeds, cold pressed olive oil, sea salt

1. First you need to fry the sesame seeds. Place them on baking paper in an oven heated to 180 °C. Bake them for about 10 minutes and stir occasionally. Don't be scared, sometimes a seed can pop up. Keep a good eye on them, 'cause they're easy to burn. As soon as they start to brown, it's done.

2. Allow the seeds to cool. Put them in a mixer or coffee grinder and crush them well. Then add the olive oil and a pinch of salt until the paste is semi-liquid. In the fridge, a glass with a lid will last you four weeks.

to do it

1. The cheapest is to buy dry chickpeas, which need to be put in cold water to make it submerged. Leave to stand best overnight. People say that chickpeas often can't be cooked, so they say it's better to buy sterilized in a can. I always managed to cook chickpeas well.In addition, you have dry for a fraction of the price and you can buy it even in organic quality. But if you are in a hurry to use sterilized chickpeas, continue to prepare from point 3.

2. Cook the chickpeas the next day. It'll take about 40 to 50 minutes. Salt it to the end.

3. Pour the chickpeas and do not pour out the broth. Put it in a mixer and mix with a few cloves of garlic. If the paste is too dense, cut it with broth. To taste, salt, add tahini paste and lemon juice.

4. Mix until smooth. Ready-made hummus can be served with pieces of vegetables, traditionally served with pita bread.

5. If you want to experiment a little, flavor the hummus with chilli peppers, add smoked tofu, tomato and mix. You can grease this enhanced hummus on the pastry as a spread.
