We are talking about dandelion, which can take root almost anywhere and with its long root they are almost indestructible. Dandelion is a perennial two-uterine plant in the chicory family. When she blooms, her "paraplíček" flies wide. It grows practically everywhere, because it is unpretentious and very durable on the soil. All parts of the plant can be used. The most active substances are in the root, which need to be collected before the plant blooms. Dandelion flowers can be decorated with desserts, enrich the salad, but the most popular and widest is the production of honey. It's syrup in the truest sense of the word, but that doesn't change its effects.

Recipe for dandelion honey

You can
wash the flowers in cold water so that there are no beetles in them, but this will also get rid of pollen. If you collect flowers in a clean place, try it without rinsing. Flowers with lemon cut into slices either pour boiling water and leave to infly, or boil for 15 minutes, then leave to infly. You can also add citric acid, but it is not necessary. Stir occasionally during 24 hours of leaching. Then overcook over the canvas, add the sugar and cook slowly until the mixture starts to scoal. Test the final consistency by saucy on a saucer and letting it cool down. Slow boiling usually lasts an hour to an hour and a half, then the honey begins to pull in folk terms. Pour the finished honey into well-washed glasses with lids and leave to cool. Store in the dark and use for colds.

Recipe for dandelion sorbet

Do you know what it is? Sorbet is a type of frozen dessert, more precisely ice cream, which contains more than a quarter of the fruit ingredient. This great recipe comes from Jana Vlková's Flower Cookbook.

You need – 200 g of dandelion flowers without green beds (only yellow parts of the flower), 1 l of water, 50 g of sugar semolina, 100 ml of lemon juice, 100 ml of orange juice

How to do it
Boil the flowers in a liter of water for about an hour, then leave to stand until the next day in the cold. The next day pour over a cod and squeeze. Put the extract on the stove and heat, add the sugar. When dissolved, pour in the lemon and orange juice. Leave to cool and pour into a mould for the toads and put in the freezer.
